You're half right Astronomical girl.
Pinocchio is not one of the Grimm Brothers Fairy Tales, but was a short novel written by Carlo Collodi, who I think may have been an Italian. But it's true that Pinocchio actually squashes and kills Jiminy in the original story, although the cricket is actually nameless. Disney certainly did soften up the story in certain little ways like that.

Astro's hair was inspired by how many American cartoons animated black hair and ears, basically in the way that the points never seem to change angle despite where Astro is facing. This also applies to Mickey Mouse and other black and white cartoon characters.
Tezuka actually said that, in the introduction to The Third Magician issue. I don't think he's said anything about Pinocchio or Betty Boop though, so citing your sources would be nice.

In original novel of The Hunchback of Notre Dame was a lot more adult, which Disney tried to tone down. Some of the themes were still kept even though they tried to not make it very apparent. =P
