Recipes and Cooking
We all have to eat, so I thought it might be fun to share different recipes that we like. Or just talk about food in general.
This is my kind of thread.
I don't have any serious recepies right now, but I do have a little dinky breakfast/snack time one.
1. Toast some white or Italian bread (I recommend Italian)
2. While its still hot spread a thin coating of butter on it
3. Immediately after, sprinkle some cinnimon and sugar on top
4. Drizzle on some honey
It's simple and it tastes great!

Cinnamon toast with honey, delicious.
Here's one of my favorite dishes. It's Bangkok Curry soup and is great for all seasons but especially great for cold weather. I am fond of spicy foods, but worry not, this recipe is not very hot.
Ingredients;
2 ounces cooked rice noodles (you CAN substitute thin spaghetti if you can't find them)
1 tablespoon olive oil
1 garlic clove, minced
1 1/2 tablespoons lemon grass, minced (you can also use lemon juice or omit entirely)
1 teaspoon ground ginger, fresh or powdered
2 teaspoons red or green curry paste (you can find this in the ethnic aisle of most grocery stores, and if you can't you can make your own with curry powder and oil)
1 32 oz carton of chicken broth (or 3 cans... I think)
2 tablespoons soy sauce
1 13.5 oz can coconut milk unsweetened
1/2 - 1 cup cooked chicken (or shrimp)
2 green onions thinly sliced
1 cup vegetables of choice (I like to use a mix of peppers, bokchoi, mushrooms and broccoli)
1. Heat oil in a large saucepan over medium heat. Stir in garlic, lemon grass (reserve the lemon juice for later if you're using juice) and ginger and cook and stir until aromatic, about 30 to 60 seconds. Add the curry paste and cook for 30 seconds more. Pour in about 1/2 cup of chicken broth, and stir until curry paste has dissolved, then pour in the remaining chicken broth along with the soy sauce (as well as lemon juice if you didn't use lemon grass). Bring to a boil, then reduce heat to medium-low, partially cover, and simmer 20 minutes.
2. Stir in coconut milk, noodles, meat and vegetables. Increase heat to medium high and simmer about 5 minutes until vegetables are soft.
To serve; ladle into bowl and eat it, you can garnish it with whatever if you want but I don't believe in doing that.
Other things; to increase the spice level you can add dried chilies or even cayenne pepper. You can probably even use hot sauce or chili sauce. This recipe is very open to being modified. If you don't like the noodles you can omit them entirely and just add more meat and vegetables.

BACON GRILLED CHEESE SANDWICH
1 18 INCH electric griddle
1 lb of bacon
2 slices of multigrain bread
1 slice of cheese
cook the bacon on the griddle, soak the bread in the fat, put cheese between the slices. While waiting for the sandwich to cook, eat the bacon.
It helps if you do not value longevity.

No Offense, Kraft . . . but THIS is the Cheesiest!
I am asked to make this for any kind of "event" - and I even won a contest with it. Yes, it is NOT "healthy" - but make up a batch and share with people you love . . . WORTH every calorie!
AprilSeven's Ultimate Macaroni & Cheese
1 lb. macaroni of your choice
1 stick butter
3 Tbl. Flour
3 Tbl. Dried minced onions
4 cups milk (or any combination of milk / light cream / half & half)
1 tsp. salt (or more to taste)
¼ tsp. pepper (or more to taste)
8 oz. Cheddar cheese shredded or sliced thin
8 oz. Monterey Jack or Muenster cheese shredded or sliced thin
8 oz. sour cream
8 oz. cream cheese
matzo meal or bread crumbs
Cook macaroni according to directions until slightly chewy (al dente); drain.
In large saucepan, melt butter over medium heat, stir in flour and cook until bubbly.
Stir in milk/cream and thoroughly incorporate with flour. Add salt, pepper and dried onions. Bring to simmer, stirring occasionally. Once white sauce has thickened, lower heat and add cheddar and jack cheeses. Stir frequently to help cheese melt and keep from sticking bottom of saucepan.
Once cheese has melted, stir in sour cream and mix thoroughly.
Cut cream cheese into slices and add to sauce stir until melted. Sauce should be about the consistency of cake batter a bit loose if it is thick, stir in milk or water until a thinner sauce is achieved.
Remove from heat and combine with macaroni. Pour into crockpot or baking dish. Sprinkle with matzo meal or breadcrumbs and bake until set (about 4 hours in crock pot 2 on high, 2 on low; or about 45 minutes in a 350 degree oven).
Yum, yum!!
